  • You'll need 1/2 cup of whole milk, 1 Tbsp of vegetable oil, and 1 large egg. 
  • Preheat griddle to 350 degrees F. 
  • Combine pancake mix, milk, vegetable oil, and the egg in a bowl and whisk until smooth. 
  • Lightly spray griddle with pan release, and scoop batter onto griddle using a 1/3 cup measuring cup or ladle. 
  • Brown on both sides and enjoy!

There is one tradition that nothing—and I mean nothing—can change: our annual long weekend camping reunion in the fall. Four best friends since sixth grade, renting the same hut in the woods of the wild Montana Mountains. Hiking. Fishing. But the best times are the mornings: making nostalgic chocolate chip pancakes, a recipe from the school cooking class that we almost never attended. And then it starts…wearing our traditional “Born to Bake” aprons and laughing ‘til we cry. Same old silly stories? Maybe. Ridiculous posing in front of the camera? Perhaps. But, for sure, the sweetest memories ever!
